Maltodextrin

Maltodextrin is a polysaccharide, or unsweetened sugar that is a sought-after ingredient for molecular gastronomy. With only a slight sweet taste and no odour, maltodextrin can be flavoured in many different ways and then sprinkled over any dish. As an excellent aroma carrier, it is easily dissolved in water and can absorb a good quantity of oil.
