Isomalt is a natural sweetener and is used for sugar pulling and casting of sweet decorations in molecular gastronomy. With a higher resistance to humidity than regular sugar, it stays flexible longer. Without the need for stabilizing, it creates a superior shine, and will not crystallize like sugar.
