This classic sauce has a Hollandaise foundation with added herbs, especially tarragon. With a predominant amount of egg yolk, we added tarragon, shallots, and vinegar to create this classic sauce. Freeze-thaw stable, steam table tested, it also has the advantage of being able to be boiled without breaking.
