One of the most popular spices in the world, pepper comes in many forms. White Pepper are the red berries of Piper Nigrum, that have be soaked after harvest, skins removed, and then dried. Crisp and more delicate than black and green peppercorns, White Pepper is excellent in white and cream sauces, with smoked salmon, or where-ever you want the flavour but not the black colour.
